French Torpedo (also known as Long French Red or Échalote de Tradition) is the iconic, elongated red shallot beloved by chefs and home cooks for its elegant shape and unmatched depth of flavor. These glossy, 2–4 inch torpedo-shaped bulbs are wrapped in beautiful reddish-copper to deep rose-brown papery skins that give them a striking, heirloom look in the garden. Planted in fall in Montrose, each bulb reliably multiplies into clusters of 6–12 (often more) long, slender cloves with rosy-purple tinged flesh inside. Torpedo shallots are strong multipliers, delivering high yields and excellent uniformity even in our short, high-desert seasons. Harvest late June to mid-July when tops yellow and fall over; after curing, they store 7–10 months in cool, dry conditions and peel quickly and cleanly once fully dry; making them a gourmet favorite that’s surprisingly easy for home gardeners to grow and enjoy year-round.
